In the kitchen: Nicola's favourite Ginger Biscuits
Nicola, Redbrick’s Marketing Manager shares an old family recipe for her favourite Ginger Biscuits. It’s super- quick and easy and a great recipe for children to try.

What you'll need
- 280g self raising flour
- 170g caster sugar
- 85g soft unsalted butter
- 1 rounded teaspoon of ground ginger
- 1 tablespoon golden syrup
- 1 teaspoon bicarbonate of soda
- 3 tablespoons hot water
- 50g crystallised ginger, finely chopped (optional)
What to do
- Pre-heat oven at 180C / fan 165C / gas mark 4
- Lightly butter a baking tray
- Sift the flour and ginger together into a mixing bowl
- Mix in the butter
- Add the sugar, syrup, crystallised ginger (if using) and bicarbonate of sofa that has been dissolved in the hot water
- Mix well and make into small balls (large marble size, this will make about 40 biscuits)
- Place on the baking tray and bake for 20 minutes
