In the kitchen: Alastair's Spaghetti and Meatballs

Alastair, our Managing Director shares with us his favourite recipe for the ultimate comfort food - spaghetti and meatballs!

What you'll need

For the meatballs

  • 8 good-quality pork sausages
  • 1kg beef mince
  • 1/2 a finely chopped onion
  • 1/2 a bunch of finely chopped flat leaf parsley
  • 85g parmesan
  • 100g breadcrumbs
  • 2 eggs
  • A pinch of salt and pepper
  • 100g spaghetti per person
  • A few sprigs of basil

For the sauce

  • 3 tablespoons of olive oil
  • 4 garlic cloves
  • 4 cans of chopped tomatoes
  • 125ml of red wine (optional)
  • 3 tablespoons of caster sugar
  • 1/2 a bunch of finely chopped flat leaf parsley
  • A pinch of salt and pepper

What to do

  1. Take the skin off the pork sausages and squeeze out the meat into a mixing bowl
  2. Add the beef mince, the finely chopped onion, 1/2 a bunch flat-leaf parsley, 85g grated parmesan, 100g fresh breadcrumbs, the beaten eggs and lots of seasoning. Mix well.
  3. Roll the mince mixture into golf-ball-size meatballs. 
  4. Heat oven to 220C / fan 200C / gas mark 7
  5. Drizzle with a little oil and roast for 20-30 mins until browned
  6. Meanwhile, make the sauce. Heat 3 tablespoons of olive oil and add the crushed garlic cloves
  7. Stir in four 400g cans chopped tomatoes, the red wine (if using), 3 tablespoons of caster sugar, 1/2 a large bunch flat-leaf parsley and seasoning. Simmer for 15-20 mins until slightly thickened.
  8. Add the meatballs to the pan and boil the spaghetti 
  9. Spoon the sauce and meatballs over spaghetti and serve with extra parmesan and a few basil leaves
